Yay! It’s time for cheap date night again! But my camera is on the fritz – not that it was working that wonderfully before, but this time you’ll have to use your imagination – not a problem!
First up, we’re going for chili dogs. Easy peasy done in the microwave omg I can’t believe they’re done already chili dogs!
(yeah, it’s a long title but work with me here)
2 flour tortillas – the smaller ones
1 microwaveable container of Hormel chili
Optional ingredients – onions, jalapenos
Heat the chili according to directions – generally it’s like one minute
While chili is cooking, sprinkle one of the tortillas with cheddar cheese and any other fixin’s you want, then roll the weenie up inside.
In a small microwaveable pan, pour in half the chili.
Place the rolled tortillas seam side down in the chili.
Top with remaining chili
Cover and microwave about 5 minutes, depending on how powerful your microwave is. (mine’s a weenie) (get it? hah!)
Sprinkle more cheddar cheese on top and serve. Kind of a weenie enchilada.
Now what would possibly go with a glorified weenie? A Snakebite of course! (oh yeah, go ahead, make your own joke)
1 bottle hard cider (I like Woodchuck Granny Smith)
1 bottle beer (something simple, like Bud Light)
Okay, hang on…these instructions are pretty hard to follow.
Pour half the cider in one glass…the other half in the second glass.
Fill with half the beer in the first glass…the other half in the second glass.
Tada! Chili dogs and beer! Grab some potato chips and lets go on a picnic!
And in case you’re wondering why this post is so short? This are exactly the circumstances under which I wrote …..enjoy a little of Simon’s Cat – or in this case, Carrie’s Six Cats.
If it’s Monday, it’s gotta be cheap date night. Even if you don’t have a date, you can certainly enjoy this little repast in your day, it’ll definitely make the rest of your week sparkle like newly-Windexed windows.
First up, comes the food of course. =)
A friend of mine once sent me some chile lime cashews. They were spectacular awesome. (thanks Jen!) After I’d eaten the entire bag, I wanted MORE. So, being the resourceful woman I am – I went hunting for a recipe to make my own. WARNING – this takes a bit longer to make than my usual “Under 5 minutes” recipe – so plan your time accordingly so you still have time to watch the movie! WARNING TWO – beware the squirrels in the tree outside the window. They can attack at a moments notice.
Chile Lime Nuts (adapted from http://simplyrecipes.com)
* 4 cups cashews – or you can use mixed nuts – or mix your own nuts!
* 3 teaspoons salt
* Grated zest of 2 limes
* 3 Tbsp brown sugar
* 2 teaspoons chili powder – if you’re creative, use other spices as well like chipolte powder.
* 2 egg whites
* 2 Tbsp lime juice
Okey dokey. Take the salt and the lime zest and muddle them together really well. Add in sugar and chili powder. Stir in the egg whites and mix well, then toss in the nuts. Put on a cookie sheet lined with foil and bake 15-20 min at 350 degrees. Take out, sprinkle with the remaining lime juice and bake 2 more minutes. While those are cooling, lets put together this awesome drink –
The Mexican Bulldog
Have you ever seen the Bucket of Margaritas? You can buy one almost anywhere, Wal Mart, Costco, Trader Joes. Grab one and prepare according to directions.
Pour the slushy mix into a salted and fairly big, heavy glass.
Open a bottle of Corona and quickly turn it upside down in the glass, leaving the bottle IN the margarita.
Now as you sip the margarita, you’ll get a bonus of Corona with every sip. The level in the bottle goes down, but the margarita level stays up.
WARNING – this can knock you for a loop. =)
And if that didn’t knock you for a loop, this absolutely ADORABLE video will – put the margarita down for 3 minutes, you won’t want to squirt it out your nose!
Everyone needs a little Happy Juice every now and then right? And a Pixy Stick? Do you remember Pixy Sticks? Sure you do…little paper tubes of flavored sugar that left small children climbing the walls at super sonic speed and their mother’s pulling their hair out.
Yeah…THOSE Pixy Sticks.
Today you can relive some of those childhood memories. Y’know, except laced with a touch of alcohol. =) And hopefully not climbing the walls.
Pick up a pack of Pixies (yup, they still make ’em!) and try this recipe on for size.
You’ll love the different flavors you can make.
Add ice to a short glass
Add 1 shot of vodka
fill to the top with Mountain Dew or Lemonade
Sprinkle a tube of Pixy Sticks over the top and stir.
Is there any woman alive out there who doesn’t secretly lust after Captain Jack Sparrow? The ultimate of the Bad Boys?
Nah? Didn’t think so.
However, most of us wouldn’t want to have him tootling around our living room either, or using all the mascara from the bathroom cabinet. So mix up one of these, put on the Curse of the Black Pearl and maybe pop up a bit of microwave popcorn instead.
And lust when your husband isn’t looking.
