Dinner, Drinks and a Movie – on the Cheap

We once again head into the land of cheap, where dinner is fast, drinks are easy and the watching is free. What more can you ask for?

First, we’ll start off our exciting evening with Chicken Fajitas. No way, Carrie! It’s too much work!

Piffle. Watch this.

1 rotisserie chicken
1 pkg fajita seasoning
onions and peppers
cheddar cheese
flour tortillas

Bring home a rotisserie chicken. Take the meat off in chunks and toss in a frying pan with Fajita seasoning mix. Toss in green peppers and onions. If you’re sneaky, you’ll have bought the kind already cut up in the store! Add water per directions. Let simmer for a bit while you warm your flour tortillas in the microwave between wet paper towels.

For each serving, top a flour tortilla with a couple spoonfuls of chicken mix, top with cheddar cheese and lettuce and salsa and sour cream if you’d like.
